Tips
Line the baking sheet with parchment paper to prevent sticking.
Be sure to use the right type of potato. Yukon potatoes are best for frying. They’re waxy enough to ensure they hold their shape when frying, but also starchy enough to become silky and smooth on the inside.

The potatoes do not need to be peeled beforehand, they taste better with the skin. However, be sure to wash the potatoes with a vegetable brush before use to remove any sand and coarse-grained dirt.
Feel free to experiment with other spices: try smoked paprika, garlic powder, Cajun seasoning, or taco seasoning.
If you find that the potatoes are browning too quickly, you can cover the baking sheet with aluminum foil.
What to serve with baked potatoes
As an appetizer: Serve the crispy baked potatoes with your favorite dip, herb pesto sauce, romesco sauce, garlic aioli, sour cream, or hummus.
As a main course: Serve the baked potatoes with a main course such as roast beef or fried salmon. Add a fresh salad and your dinner is ready!

How to store baked potatoes
These baked potatoes are best served crispy. Leftovers can be stored in the refrigerator (in an airtight container) for up to 5 days. To reheat, heat in the oven at 425°F until warmed through.
In a bowl, combine melted butter with Parmesan, garlic, salt, pepper, and oregano.

Cut off the two sides of the potatoes.

Cut the top of the potatoes, making sure it doesn’t cut all the way through.

Place the potatoes on a baking sheet and brush with the prepared mixture.

Gently flip the potatoes over and brush them again with the Parmesan mixture.

Bake at 360°F (180°C) for 20 minutes.

Flip the potatoes and bake for another 15 to 20 minutes.
