FLAVOUR 1:
260 g biscuits 80 g custard
850 ml milk
6 tablespoons sugar
1/2 tablespoon vanilla extract
150 ml milk 2 egg yolks
2 egg whites
TOPPING 2:
150 Whipped cream
50 g whipped cream mixture
METHOD
Heat 850 ml of milk in a saucepan.
In a separate bowl, whisk together sugar, custard, 150 ml milk, vanilla extract and two egg yolks.
Pour the pudding mixture into the hot milk and stir well until it thickens.
Allow to cool for 15 minutes.
Beat two egg whites and slowly add to the custard mixture. Work in slowly.
Place several cookies in a square tray with removable sides.
Pour the custard mixture over the biscuits.
Mix the whipped cream with the cream. Pour over the previous mixture. Place more cookies on top.
Place in the fridge for 30 minutes.
