Vegetable beef soup

In a large pot, fry the beef in a little oil or fat until brown.
Add the onions and sauté until translucent.
Add all the vegetables (carrots, celery, leeks, potatoes, etc.) and fry briefly.
Add the beef broth until the meat and vegetables are covered.
Add seasonings such as salt, pepper, bay leaves and thyme to add flavor.
Bring the soup to a boil and then reduce the heat. The soup should now simmer until the meat is tender and the vegetables are soft. This can take about 1 to 2 hours depending on the size of the meat and vegetables.
Once the vegetable beef soup is ready, it can be served hot. It can be garnished with fresh herbs if desired.
