Ingredients:
For the dough:
200 ml of hot milk
300 g of bread flour
200 g of cake flour
1 egg
80 g of seed oil
Grated lemon zest
100 g of sugar
1 cube of fresh brewer’s yeast
1 vanillin
Half a teaspoon of salt
For the filling:
2 or 3 apples
Cinnamon
1 tablespoon of sugar
1 tablespoon of lemon juice
1 tablespoon of apricot jam
For decoration:
1 egg yolk + a little milk

Dissolve the yeast in slightly warm milk.
Add the sugar, oil, egg, vanilla and lemon zest.
Then incorporate both flours a little at a time.
Finally add the salt.
Knead until you obtain a smooth and uniform dough.
Place in a bowl, cover and leave to rise for 2 or 3 hours.
Peel and dice the apples.
Place them in a saucepan with cinnamon, sugar and lemon juice.
Cook on the stove until softer. Then add the jam.
Roll out the dough on a floured work surface, then divide it into two equal parts.
Fill both with the apple mixture and close.
Now place the two loaves in a round mold with baking paper on the bottom and form the swirl.
Cover and let rise for another hour.
Brush the surface with a little beaten egg yolk and milk, then decorate with granulated sugar.
Bake at 180° for 40 minutes.
