Ingredients.

This tasty one-course meal is guaranteed to be a winner of the dinner! The chicken is cooked in garlic butter and served with fried sweet balsamic tomatoes and melted mozzarella. Serve it with pasta, rice or vegetables and plenty of crusty bread to dab up the delightful sauce.

Making the marinade Add all ingredients except the chicken breasts along with 1 teaspoon salt and 1/2 teaspoon black pepper in a zippered bag. Close the bag and shake until combined.

Add the chicken breasts. Seal and massage in so that the chicken is covered with the marinade.

Let it rest for 10-15 minutes while you prepare the rest of the ingredients. Place a rack in the center of the oven and preheat the oven to 425F/200C fan/gas mark 7.

For the balsamic tomato sauce Add all ingredients except the mozzarella to a deep ovenproof dish with a large pinch of salt and pepper and stir to combine. Place the tomatoes on the edge and place the chicken breasts in the center of the mold.

Cook uncovered for 18-22 minutes or until chicken is almost fully cooked. Add the mozzarella cheese to the chicken breasts and place under the grill until the cheese melts.

Garnish with chopped basil or parsley and serve hot with a side dish of your choice.

Notes Pre-grated mozzarella doesn’t work as well in this recipe – for best results, buy fresh mozzarella balls and tear them into pieces.

You can marinate the chicken up to 4 hours before cooking, so this is an ideal dish to prepare in advance.
