Ingredients
- 200 g pre-cooked beetroot
- 100 ml soy milk
- 100 ml sunflower oil
- 1 tablespoon lemon juice
- A pinch of salt
Preparation
- Cut the beets into cubes and collect them in a tall glass.
- Add soy milk and salt and stir until smooth.
- Slowly pour in the sunflower seed oil and continue blending at low speed.
- When the mayonnaise has reached the desired consistency, add the lemon juice and blend for another minute.
- Pour the mayonnaise into a jar and store in the refrigerator until ready to serve.
