Ingredients

  • 200 g pre-cooked beetroot
  • 100 ml soy milk
  • 100 ml sunflower oil
  • 1 tablespoon lemon juice
  • A pinch of salt

Preparation

  1. Cut the beets into cubes and collect them in a tall glass.
  2. Add soy milk and salt and stir until smooth.
  3. Slowly pour in the sunflower seed oil and continue blending at low speed.
  4. When the mayonnaise has reached the desired consistency, add the lemon juice and blend for another minute.
  5. Pour the mayonnaise into a jar and store in the refrigerator until ready to serve.
