PREPARATION
1. Add the potatoes to the pot of water and bring to a boil. Let them cook for 30 minutes. Then remove from the water and set aside to cool.
2. In a bowl with minced meat, add salt, pepper, parsley, egg and breadcrumbs and mix well.
3. When the potatoes have cooled, cut them in half and remove the inner part. Transfer them to the baking sheet lined with parchment paper and pour the olive oil over them.
4. Place cheese cubes on each half of the potato and seal with the meat. Pour olive oil over it and cover with grated cheese.
5. Place the stuffed potatoes in the oven and bake at 180°C/360°F for 40 minutes.
